Jura
Zéroïne was founded in 2018 as a négociant project by three people: Maylis Bernard, Jean-François Ganevat, and Anne Ganevat (Jean-François’s sister). With the release of the 2020 and 2021 vintages, Zéroïne has transitioned to becoming a part-domaine project, as Maylis has acquired small plots near the estate in La Combe de Rotalier, South Revermont (in the region of Bourgogne-Franche-Comté).
In the vineyard, Maylis practices soil plowing and vine protection using plant-based preparations only. She used traditional techniques in the cellar, with fermentations carried out in open-top wooden vats and extended aging in barrel and demi-muids, with at least one year in bottle before release. She prefers to let the wines express themselves rather than using interventions such as SO2, and her goal is to create the highest-quality natural wines possible. Maylis was inspired by the Ganevat family and the opportunity to carry on the Jura tradition of making wines of purity that.
