Closely connected to the vines she grows, Judith Beck is a winemaker who spends as much time as she can out in the vineyards, located on the slopes of the Wagram. She converted to biodynamics in 2007 and is focused on maintaining the authenticity of what drives the terroir of Austria, with a focus on traditional Austrian varieties.
“Ink” is a blend of 80% Zweigelt and 20% St. Laurent, sourced from vineyards in Gols and Pamhagen. Judith picks the most forward and expressive batches of grapes for this wine. The grapes are destemmed and undergo spontaneous fermentation in stainless steel tanks. The wine is transferred to large neutral acacia wood casks for two months to complete malolactic fermentation, and then transferred to neutral 500- and 1000-liter casks for 8–10 months of aging. The two varieties are blended and bottled in September before the next harvest.
The nose offers fresh aromas of red cherry, raspberry, and plum, with notes of black pepper and baking spices. The palate is juicy, with soft tannins and medium acidity, and finishes on notes of blackberry, tobacco, and cocoa. Serve it with a slight chill and try it with richer fish dishes, veggie stews, and pork or chicken dishes, even those with elevated spice.
