Burgundy
Thomas-Collardot is a family-run domaine in Puligny-Montrachet, a village in the Côte de Beaune region of Burgundy. Comprising 2.5 hectares, the vineyards have been owned by the family for three generations, and the domaine has been managed by Jacqueline Collardot since 2010. (They were managed by Jacqueline’s father, Pierre Thomas, until 1992, then leased to his cousins Hubert and Philippe Chavy until 2010.) Her first vinification was in 2015, and her son, Matthieu, joined the domaine in 2018.
The vines are farmed organically, and some biodynamic treatments are used. The domaine is focused on achieving the best expression of its Chardonnay vines, whether destined for wines in the Burgundy, village or premier cru appellation. Each plot is harvested manually. During pressing, the focus is on preserving the primary aromas and flavors. The musts are settled for 24 hours in stainless steel vats without the addition of sulfur. Fermentation occurs in 350-liter barrels with native yeasts. The domaine uses mostly neutral barrels, with some newer ones used each year to replace the oldest. The wines age on the fine lees for 10 to 12 months before being blended in stainless steel vats and resting for an additional period of time.
The "Les Climats" bottling is a blend from the different plots they own, both village level as well as Premier Cru. Some incredible vineyards go into "Les Climats," and the wine punches above its weight. Given today's prices of White Burgundy, I think this is an excellent value. The 2022's are exceptionally pure, and are accessible today, making this a great addition to your holiday table.
