Founded in 1921 by Lorenzo Scavino and his son Paolo in Castiglione Falletto, the Paolo Scavino winery has always lived up to certain traditions: passion for the land and the wines that can express it. Since he started working at his family's winery in 1951 (at age 10!), Enrico Scavino has carried on the tradition of intensely terroir-driven wines. He now works with his two daughters, Elisa and Enrica (fourth generation), and their wines are well regarded for their purity and elegance. Scavino shows consistently that their attention to detail and precision is applied to not only their Barolo wines but all their wines.
Scavino is still a small family farm, now managing 30 hectares of vines, exclusively within 8 of the 11 communes of the Barolo appellation: Castiglione Falletto, Barolo, La Morra, Novello, Serralunga d’Alba, Verduno, Roddi, and Monforte d’Alba. This gives them a unique perspective to showcase the diversity of the region’s land. A focus on quality in the vineyard and the cellar is central to their approach and high standards.
The Scavino “Vino Rosso” is a blend of 40% Nebbiolo, 20% Dolcetto, 20% Barbera, and 20% Merlot. The grapes were harvested from the estate’s younger vines. Vinification and aging were carried out in stainless steel only.
The nose offers aromas of fresh and concentrated black cherry, plum, blackberry, and violets, with notes of anise, pepper, and earth. Medium-bodied, with moderate tannins and acidity, pair this wine with a range of antipasti, or a simple dish of grilled pork chops with shiitake mushrooms.
