    Le Roc Des Anges "Segna de Cor" Côtes Catalanes Rouge '21

    Roc des Anges is located in Latour de France, Roussillon, and was founded in 2001 by Marjorie and Stéphane Gallet. She was born in Grenoble and grew up in the Northern Rhône, and he was born in Normandy. The couple met at the agronomy school in Montpellier. The practice organic (certified, practicing since 2008) and biodynamic (certified, practicing since 2011) viticulture.

    Spelled backward, “Segna de Cor” is almost Roc des Anges. The wine is made of 40% Grenache Noir, 30% Carignan, and 30% Syrah, a blend of about 20 small parcels on schists. The average vine age is 30 to 40 years old. The grapes are mostly destemmed, and fermentation is carried out with ambient yeast in closed concrete tanks for seven days. After pressing, the wine is racked into tank to complete fermentation, and aged in tank for approximately 10 months. No temperature control, punch downs, or pump overs are used. No fining, light filtration. The wine is aged for several months in bottle before release.

    Finding balance in Roussillon wines in a challenge, but this wine manages it. Beautiful dark cherry notes, bittersweet chocolate, and dried spices can be found on the nose. The palate is medium bodied and maintains a surprising freshness. There are lots of fun food and wine pairings with this, especially Peking duck with hoisin.
