This is a unique gem of a sake as it undergoes the ancient sake-making technique called the “Yamahai” method which requires great patience and expertise and develops a sake of pure intensity, full of umami and robust earthiness. This specific method doesn’t allow stirring of the brew used to expedite the fermentation process which in turn develops multiple layers of flavors and aromas not easily obtained. High quality organic Shizenmai rice is polished down 60% to reach pristine quality offering flavors of starfruit, honeysuckle, white melon, and lemon zest. No wonder the translation of Kinpou is “Golden Treasure”!
