We love all sake from Miki Fujioka, toji of Kawatsuru, based in the Kagawa prefecture of Japan. Yet this is something new, and so truly fantastic, we had to carry it in the store. Miki-san was able to isolate the yeast strain from the Sanuki olive, native to the region, and use it in the production of this Junmai Ginjo. Juicy notes of musk melon, white flowers and green pear with hints of starfruit, grass and salinity. This will be fun to pair with different vegetable dishes.
