Champagne
In the grand cru village of Le Mesnil-sur-Oger, Didier Vergnon and his son Clément are the fourth and fifth generations to lead this small estate, totaling five hectares, originally founded in 1950. It was in the 1980s that Jean-Louis Vergnon first began producing estate-bottled wine from sites in the Côte des Blancs, including multiple parcels in and next to the legendary Les Chétillons. Over the last 20 years the family has pushed the farming to practicing organic, harvesting only balanced and ripe grapes, to produce authentic and pure Champagne. The result is that Vergnon has eliminated chaptalization and malolactic fermentation, uses a low or zero dosage depending on the wine, and is harvesting some of the finest chardonnay in the region.
“Eloquence” is made with 100% Chardonnay, with the majority coming from Le Mesnil-sur-Oger grand cru and 10% from Avize and Oger grand cru vineyards, with an average vine age of 30 years. The wine is fermented and aged in 80% stainless steel and 20% older barrels (400 liter), and does not go through malolactic conversion. It is aged for 36 months on the lees, and the dosage is 3g/l.
