Heiwa Shuzou is located in a valley in Kainan City, Wakayama, originally built as a temple and renamed after the end of World War Two (heiwa means “peace” or “harmony”). The brewery has been making sake for four generations, and the KID brand is a newer addition, with production having started about a decade ago.
Heiwa Shuzou’s KID Omachi Tokubetsu Junmai is made with Omachi rice, renown for its rich and earthy characteristics, and Koyasan Nansui water. This sake shows notes of melon and apple, with an umami flavor that finishes dry and crisp. Serve it well chilled, and enjoy it with a range of foods, from broths to steak. Dryness : SMV +1.0.
