Gerbais Champagne "Champ Viole" Extra Brut NV
"Champ Viole" is made from Chardonnay grown next to the Abbaye Notre-Dame de Mores, one of the very first slopes planted with vines by the Cistercian monks because of its ideal location (south-facing, midslope, shallow/resurfacing Kimmeridgian soil). The wine is a blend of 50% base vintage, 50% perpetual solera reserve dating back to 2011. Indigenous yeast fermentation in stainless steel tanks, aged on fine lees. Cellared for 36 months with organic yeastsur lattes. Extra brut dosage.
