Dominio do Bibei is situated in the dramatic landscape of the Quiroga-Bibei subzone in the Ribeira Sacra. This Easternmost section is hemmed in by the Bibei River, and fording to the other side of the river, you would find yourself out of the Ribeira Sacra entirely, and in Valdeorras instead.
Over several decades, the Domínguez Family (spearheaded by Javier) has acquired 32 hectares of vines situated up and down a rugged, North facing hillside of schist and granite. This Northern aspect is particularly important for Javier - even when he supplements his own vineyards with fruit purchased from neighboring growers, he only buys grapes that face North. All this to worship at the twin altars of freshness and acidity, necessary in the Quiroga-Bibei, has this sector of Ribeira Sacra is far enough inland to shed the cooling Atlantic influence.
This delicate approach emphasizes the floral character of the Treixadura dominated blend, blooming with honeysuckle and pollen, and a note of clove and anise, present but restrained from a percentage of oak aging of various sizes in addition to concrete and steel. Match this with mussels steamed in white wine, or with the nutty richness of Jamón Ibérico.
