It is here that in the early 1980s Dominique Hauvette, seeking more sunshine, left her job as a lawyer in the Savoie, rediscovered her passion for raising horses, and began studying oenology. “Jaspe” is made from 100% Roussanne, from a two-hectare vineyard with an average vine age of 15 years. It is fermented in concrete eggs and aged briefly in stainless steel. This achieves balance rarely tasted in the world of Roussanne. A great winter white, and a perfect pairing with so many foods.
