Domaine Hauvette "Cornaline" Le Baux de Provence '17

If there is one wine to know Hauvette by, it's Cornaline!

The “Cornaline” rouge has been compared to a blend of Trévallon, Tempier, and Vieux Télégraphe.  Composed of 50% Grenache, 30% Syrah, and 20% Cabernet Sauvignon, with an average vine age of 40 years, it is vinified in foudre.

Both the 2017 and magnums of 2016 are spectacular. The blend of these grapes gives this wine its unique identity. Dark fruit, fig, black tea, spice, all come together in a full-bodied, but balanced style. I'd grill up a flank steak, and make a little vinaigrette to pour over the top with anchovy fillets, garlic, parsley, lemon and more. Something simple, but packed with flavor to go along with this great wine.
