Cinco Sentidos "Ensamble de 4 Magueyes" Mezcal

Cinco Sentidos is a representation of small-scale maestro mezcaleros that produce agave spirits with complex flavors. We select high-quality distillates that represent the various production processes, agave diversity, and traditions and talents of Mexico's master distillers of agave.

“5 Sentidos Ensamble de 4 Magueyes is a unique batch that was a private selection for the Aficionados spirits group. This 60-liter batch is an example of a field blend, that is stylistically typical of many producers in Miahuatlan. Four different agave varieties were used in making this ensamble: 45% Bicuixe (Agave karwinskii), 25% Coyote (Agave lyoba – this is a hybrid between an Agave karwinksii and Agave potatorum, sometimes known as Coyota in other regions of Oaxaca), 25% Tepextate (Agave marmorata), and 5% Madrecuixe (Agave karwinskii). The were all roasted together for six days, then crushed by a large tahona that was pulled by an old Ford tractor. After they were milled, the agaves fermented with naturally occurring yeasts for six days in a single pine tank. They were then double-distilled in two copper alembic stills in August 2019.”
