Champagne
Champagne Ullens began in 2012, when the Belgian-born Maxime Ullens purchased Domaine de Marzilly, in the Massif de Saint-Thierry, Champagne’s northernmost region. He renovated the château and went to school to learn about producing Champagne. He now works with vines on four hectares of his land. All of the plots are vinified in oak barrels, and the barrels are made with trees from the local forest, by the Tonnellerie de Champagne of Cauroy-lès-Hermonville.
Made of 100% Meunier, “L.P.M.” stands for La Petite Montagne, an area within Champagne’s Montagne de Reims, and is made from a single plot of Meunier. The wine is vinified in oak barrels, resting on its lees for 11 months during the initial fermentation, then aged in bottle for 18 months. Riddling is done by hand. Dosage is 2.4 g/l, and the wine is unfined and unfiltered. Tirage: August 2019. Dégorgement: December 2021.
