Champagne
This is an outstanding small grower Champagne house based in the village of Congy. Christophe Chevreau comes from a family of vignerons, though it was only his father who began producing Champagne in 1971.
Today, the estate covers 5.8 hectares, with vineyards in Congy, in the Sézannais area, plus 0.8 hectares in the Aube and another 0.8 hectares in the Marne Valley. He sells only two pressings of grapes from the Marne Valley, as he is not fond of their quality, vinifying all the rest himself. This results in an annual production ranging from 40,000 to 50,000 bottles.
The Blanc de Noirs is made from 80% Meunier and 20% Pinot Noir grown in parcels around Congy, most of them adjacent to those of the cult producer Domaine Ulysse Colin. The Meunier comes from two vineyards, Les Roises and En Enfers (The Ulysse Colin Roises sells for $800 per bottle). The Pinot Noir hails from Robes Rouges and Radiates.
Vinification is carried out entirely in tanks, with malolactic fermentation completed, and bottling taking place between spring and summer. This spent 34 months on its lees, bottled in February of 2025 with a dosage of 4 g/l.
Beautiful aromas of yellow apple, strawberry, bergamot, cream, and pastry dough, with a light note of dried mushroom that adds to the umami flavor.
