Since Celler Pardas first found its estate, Sumoll has been a focus of the work in the vineyards. In the beginning years, the Sumoll story at Pardas was told through two wines: an ageworthy rosat and a superbly complex red called “Collita Roja.” Sumoll is a black grape whose name comes from the local slang sumollar, which means “maturing” or “withering.” When young, the grape has a roughness, eluding to its longevity. Aromatically you may find some similarities to the Italian grape Dolcetto, with notes of plum and red cherry, along with herbs and licorice.
The Sumoll for “Collita Roja” comes from two vineyards, Can Canals and Pont Nou. After 15 days of skin maceration, the wine was aged for 6 months in a combination of barrels, concrete tanks, and steel tanks.
This red is not for everyone. If we blinded you on it, most likely you'd think it was Italian. That is the beauty of Collita Roja and Sumoll it challenges you to think, to taste. The aromas evoke dark berry notes, mineral and alpine herbs. On the palate, it is medium bodied, with soft tannins, spice and a long, deep finish. This is a wine that is meant to be served at the dinner table.
Pair it with a mushroom risotto, or try grilling the classic Catalan sausage called Botifarra.
