Rheinhessen
Bianka and Daniel Schmitt are among the most exciting young winemaking couples in Germany today. Based in the small village of Flörsheim-Dalsheim in Rheinhessen, the couple has transformed their 15-hectare family estate into one of the region’s most compelling voices. While Riesling sits at the forefront of the range, the domaine produces a wide variety of wines, totaling roughly 50,000 bottles annually.
Since 2012, the Schmitts have farmed their vineyards biodynamically, earning Demeter certification and placing a strong emphasis on soil health, biodiversity, and minimal intervention. This philosophy carries seamlessly into the cellar, where the focus remains on transparency, balance, and a clear expression of place. The couple has also invested significant energy in new packaging and in clearly delineating between the different “levels” of wines they produce.
“Freiheit,” which means “freedom,” is the name given to their “everyday” wines. The six wines under this label are those that the Schmitts feel free to experiment with, either in their blends or in the way they are vinified. “Freiheit” Weiß, the wine featured here, is a blend of six different varieties. Scheurebe and Huxelrebe are macerated on their skins for one and a half weeks, while Weißburgunder, Grauburgunder, Riesling, and Silvaner are whole-cluster pressed. The components are then blended, fermented with native yeast, and aged on their lees in a combination of stainless steel and large oak barrels.
The resulting wine is both delicious and distinctive. It shows explosive aromatics of white flowers and apple, with just a hint of vegetal notes. On the palate, it is fresh and vibrant, with flavors of white peach, lychee, and mineral. The finish is long and refreshing. This would be an excellent wine to enjoy with nigiri.
