Loire Valley
Made from Chenin Blanc, “Les Perrières” is whole-cluster pressed , and fermentation is carried out with indigenous yeast. Half the wine is vinified in 30hl foudre (bought in 2012) and half in two-to-three-year-old French oak barrels. Malolactic conversion seldom occurs. There is typically one bâtonnage (stirring of the lees) at the beginning of the winter, two months after the primary fermentation. Beautiful wet-stone minerality on the nose and palate, with bright notes of lemon and lime. Medium bodied.
