Antoine Chevalier’s ratafia, a type of mistelle made by mixing marc with unfermented grape juice (also called must), is produced from Chardonnay and aged for a minimum of three years in oak barrels, in the solera method. Serve it chilled and serve it with salted nuts, washed-rind or blue cheeses, foie gras, or a range of fruit, caramel, or chocolate desserts.
