    Ameztoi "Rubentis" Txakolina Rosé '24

Often imitated and never duplicated, Ameztoi is the top producer of Getaria Txakolina (pronounced cha-ko-lina), the signature wine of the Basque region. There are three separate appellations spanning the northern coast. Ameztoi lies to the east of San Sebastián, one of the gastronomic capitals of Europe. To go to a pintxos bar in San Sebastián, sampling the specialties of each restaurant and washing it all down with Txakoli, easily merits a spot on the bucket list of every food lover.

Ignacio Ameztoi has magnificent vineyards facing the Bay of Biscay. Here he grows indigenous varieties, with Hondarribi Zuri as the main white grape, and Hondarribi Beltza as the main red grape. Rosé Txakolina is not traditional in Basque Country, but Ignacio Ameztoi started a revolution when he first produced “Rubentis.” Having gained a loyal following, it sells out every year. “Rubentis” is a blend of Hondarribi Zuri and Hondarribi Beltza. The grapes are cofermented and produced in the same way as the classic Txakolina. Ameztoi has vines that date back to 1918, and some of that fruit is used for this blend.

There are few wines that are as drinkable and crowd-pleasing while still retaining a soulful character as this one. The aromatics combine notes of citrus, cherry skin, and herbs. The palate is bright, ultralight, mineral driven, slightly spritzy, and incredibly refreshing. A great match for sushi, seafood salads, and dishes with salty-citrusy flavors, such as grilled citrus white fish with an herb salad.
