Trabanco is one of the top producers of cider, and more specifically of natural Spanish cider. In Asturias, off the coast of the Cantabrian Sea, is where some of the best apple orchards are found. This is the epicenter for Spain's apple production. Trabanco was founded in 1925 and has remained a family affair ever since, and continues to be synonymous with Asturian cider.
Alma de Trabanco is the first-ever quinquina made with natural cider en rama, which means the cider is unfiltered. What is a quinquina, you may ask? Quinquina is a type of aromatized wine, the same category that vermouth falls in. The base is wine, in addition to various botanicals and fruits that have been steeped in vinous alcohol. The difference between vermouth and quinquina is that quinquina always has the addition of cinchona bark, the primary source of quinine. The most recognizable beverage to utilize the flavor of quinine is tonic water.
Bottled at a refreshing and versatile fifteen percent alcohol, Alma is the perfect aperitif produced by the blending of en rama cider with white wine and various botanicals steeped in vinous alcohol. The primary botanicals in Alma de Trabanco include cinchona, wormwood, savory, gentian, artemisia, boldo, cinnamon, star anise, coriander, thyme, and vanilla. Fruits include cherry, orange peel, and lemon.
