Quinta do Javali Pét Nat '21
Grapes for this Pét Nat come from approximately 20-year-old vines, and as with all Javali vineyards, it is farmed using biodynamic practices. In keeping with traditional methods in the Douro valley, this vineyard features a field blend of only native Portuguese indigenous grape varieties, such as Touriga Franca, Tinta Barroca, and Tinta Roriz. The steep hillside location of the vineyard, with its schist soil composition, ranges in altitude from 550 to 700 meters and faces northeast. The grapes are fully destemmed and fermented in stainless steel. Bottled without stabilization before finishing the alcoholic fermentation. Final fermentation occurs in the bottle. Fruity, bright, and refreshing, this is a perfect wine for a summer afternoon picnic in Chicago, or for a pizza party, or for charcuterie and cheese boards, or really for any occasion!
