    Pra' "Otto" Soave Classico '23

    Graziano Pra’ comes from a family of winegrowers in Soave who have always adhered to outstanding principles in the cellar and in the vineyards, including organic farming. He began his family winery in the early 1980s and has continued to produce excellent wines characterized by freshness.  While most of his vineyards in are Soave, since 2001 he has worked with about seven hectares of vineyards in Valpolicella.  
     
    The “Otto” Soave is made from Garganega sourced from vineyards in the Soave Classico zone, with some of the fruit sourced from the Monte Bisson zone, which is a more limestone-rich soil compared with the other soils of Soave, which are mainly volcanic. Graziano notes that the limestone produces more tension and acidity in the wine, whereas the more typical volcanic soil imparts more body as well as salinity and minerality to the wine. The grapes are manually harvested, and the vines range in age from 30 to 60 years. The wine is fermented in stainless steel and aged in stainless steel on its lees for four to five months.

    This jumps out of the glass with aromas of fresh peach, apple, and lime zest. Light in body, yet still with enough weight to stand up to a wide range of foods. Fresh, crisp, and so delicious. Bring on the seafood boil, or drink this wine as an aperitivo alongside some fresh goat cheese crostini.
