    Le Prieuré de Saint-Céols Menetou-Salon Blanc ‘22

    The Menetou-Salon area stretches southwest from Sancerre, toward the city of Bourges, comprising about 625 hectares across 10 villages. Like Sancerre, it is an appellation in the broader region of the Loire Valley known as the Central Vineyards. The vines (Sauvignon Blanc and Pinot Noir are the permittedvar grow on Portlandian and Kimmeridgian limestone soils, and the wines are produced in a style that mirrors that of Sancerre. Menetou-Salon wines tend to be more generous in profile than those grown closer to the Loire River, but they can show the same aging potential.
    The winemaker Joseph de Maistre is originally from the region and knew the appellation had great potential for quality wines. He purchased Prieuré de Saint-Céols for the opportunity to run a domaine with vineyards in some of Menetou’s most prized sites. He and his wife, Marie, farm twelve hectares, nine of which are planted to Sauvignon Blanc, and they recently finished converting to organic viticulture. They practice low-intervention winemaking, with fermentations carried out naturally, and their wines are lively, with excellent minerality.
    The vineyard is about 10 hectares, planted in the 1990s, and the viticulture is certified organic. The wine, made solely from Sauvignon Blanc, is fermented with native yeasts and aged on the fine lees with regular bâtonnage for 12 months.
