Puglia is one of the greatest culinary regions of Italy. The warm and dry climate of the region is perfect for organically farming an excellent array of vegetables and fruit, including grapes. Paolo Petrilli is one of the regions great proponents of organic farming, and while his reputation as a tomato farmer extends beyond the region and country, his reputation as a farmer now extends beyond tomatoes to grapes. In 2002, Petrilli began production of wines produced from local grapes such as Nero di Troia, Sangiovese, Bombino and Montepulciano. The grapes are grown on 11 hectares of estate vineyards near the town of Lucera, in the northern reaches of Puglia, and vineyards are composed of stoney, calcareous soil. The vines are densely planted, south facing, but they benefit greatly from the natural wind flow that goes through the vineyard. Like the tomatoes they are organically farmed and hand harvested.
The rosé is made from the Nero di Troia grape, hand-harvested in small baskets to balance fresh acidity and maturity. Only the first pressing is added to the must. Fermentation takes place in 80% stainless steel and 20% used barrique. The wine rests on the lees for six months, until bottling.
