Penedès
The Mont Marçal winery was founded in 1975 by Manuel Sancho and changed ownership in 2015, though the focus on producing delicious Cava has continued. The 230-acre estate, Finca Manlleu, is located on a prominent chalky knoll and overlooks the hamlet of Sant Marçal. The range of exposures create a variety of microclimates, with one hundred acres planted to red and varieties. The wines are certified organic by both Spain and the US, and vegan friendly.
The Mont Marçal Brut Reserva is produced from the white grapes Parellada, Macabeo, Chardonnay, and Xarel-lo. The grapes are fermented separately in stainless steel tanks at a cool temperature, the first lots are blended, and secondary fermentation is carried out via the traditional method, in bottle. The wine is aged at least 18 months on the lees.
This is textbook Cava, with plenty of mineral, stone fruit, and herbs on the nose. Bone dry, with notes of quince and lemon peel, and a salty yet fresh finish. My favorite pairing of all time with Cava is calçots, which are spring onions grilled over a fire, then wrapped in newspaper. You pull the calçots out as you eat them, and dip them in romesco sauce. With a sip of Cava, they are among the great simple pleasures in life.
