    "This Natural producer uses no pesticides, fertilizer, or chemicals in the production of his sake. Biodynamic since 1967, they have some rice fields that the only fertilizer is mulch from the previous year’s harvest. He uses tiny shrimp in the rice field to aerate the soil. Made with local rice the Kinpou Odayaka has soft melon notes, hints of rice, and delicate sweetness. You can taste the rice in the sake: It is clean and rounded and full of umami. Pair with sautéed fish with miso, grilled asparagus, camembert cheese, summer rolls.”
