Jacques Lassaigne Champagne "Les Vignes de Montgueux" Extra Brut Blanc de Blancs NV
Jacques Lassaigne is a small family-owned producer in Montgueux, working with less than five hectares of vineyards planted to Chardonnay. Though it sits in the Aube, an area known for the variety Pinot Meunier, in terms of its terroir Montgueux is more similar to vineyards in the Côte des Blancs, to the north, where limestone is likewise prized for Chardonnay.
The domaine is now run by Emmanuel Lassaigne, Jacques’s son, who has been working with the vines since 1999. Initial fermentations are carried out with indigenous yeasts, and the wines are disgorged by hand, an uncommon practice in Champagne, where machines are typically used. The nonvintage "Les Vignes de Montgueux" is a blend of nine different vineyard sites, with each parcel vinified separately. It is aged in new and used barrels for 12-24 months, then aged in bottle for 1-5 years until disgorgement. There is no dosage. Citrus zest, stone fruit, and mineral notes define the nose, and the palate is dry and relatively full bodied with refreshing acidity.
