Istine Chianti Classico '21
The grapes are sourced from estate vineyards: primarily Istine, Casanova, and Cavarchione, along with Tibuca and Le Noci. The vineyards are located on different hillsides in Radda and Gaiole in Chianti. The vineyards are all guyot trained. The soil here is rich, with alternating marly limestones (alberese and galestro) and variable percentages of clay. Sangiovese fruit is harvested by hand.
Fermentation lasts for 15–13 days in concrete and stainless steel. The grapes macerate for a total of 3–8 weeks on the skins. Istine's Chianti Classico spends 12 months in Slavonian oak casks and barrels of varying sizes and is partially aged in concrete tanks.
