    THIS is Chambolle-Musigny in a glass! The only thing is, it isn’t from Burgundy, it isn’t Pinot Noir, and it doesn’t cost $60-$300 per bottle like a great Chambolle would! This is from Portugal. It is a wine we have written about on these pages previously. It is a wine that deserves your attention. dominó is the winery of ex-Chef Vitor Claro and his wife Rita Ferreira. In 2010, Vitor made his first wine called “Salão Frio” from a small vineyard in the Portalegre district of Alentejo, Portugal. This is the “cool climate” of the normally warm Alentejo region, as it sits at the base of the Serra de São Mamede foothills. The vineyard was exactly what Vitor was looking for, cooling temperatures, old vines, and co-planted varietals. To date, this wine remains Vitor and Rita’s most important wine. A wine that is delicious when it is young, but as I tasted that 2010 vintage with 9 years of bottle age on it, can attest that it can gain in complexity. The 2016 Salão Frio is a blend of Aragonez, Catelão, Arinto, Tamarez and Grand Noir. The vineyard is a mixture of clay and granite, with the vineyard exposed to both the north and the south. Once the grapes are picked they are whole bunch pressed, and macerated in stainless steel tanks for two months. The wine is aged in used French oak barrels for 8 months. It is aged in bottle for 2 years before release. The 2016 is truly beautiful. Why call it Chambolle-Musigny? It is that similar combination of red fruit, such as strawberry and cherry, as well as notes of orange peel, licorice and what the French call “sous bois,” those earthy/woodsy qualities that emerge on the nose and palate. This is what I’ll be drinking at my Thanksgiving table this year. It goes with so many different flavors, is only 11% (allowing me to have several glasses), and is just a pleasure to drink.
