"Les Poisets" is made from one hectare of 50-year-old vines grown on clay and rocky chalk soil. Fermentation is with indigenous yeast, and the wine was fermented for 15 days in cement tanks. Maturation lasted for one year in oak barrel, 15% new oak, with the rest in barrels ranging from one to five years in age.
