Yet Gamay has a long history in this southern part of Burgundy, and several villages have their own appellations for red wine. Mâcon-Serrières is reserved for red and rosé wines made entirely from Gamay in the small village of Serrières, southwest of Mâcon.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eDomaine de la Sarazinière is located in the neighboring village of Bussières, around ten kilometers west of Mâcon. The modern history of the domaine began when Philippe Trébignaud took over the family vineyards during the 1990s and began moving away from conventional farming, influenced in part by his mentor, Marcel Lapierre. His son Guillaume assumed responsibility for the cellar in 2020, becoming the fourth generation of the family to farm here. Today, they work roughly eight hectares divided among 28 parcels, farming organically, harvesting entirely by hand, and fermenting exclusively with native yeasts.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003e“La Pépie” is a colloquial French reference to thirst, an appropriate name for a wine built for drinking. It comes from a single parcel of slightly more than one hectare, planted to Gamay vines that are approximately 15 to 20 years old. While limestone and clay dominate most of the domaine’s vineyards, this site in Serrières is planted on sandy granite soils, giving the wine an entirely different character.\u003c\/p\u003e\n\u003cp\u003e \u003c\/p\u003e\n\u003cp\u003eThe grapes are destemmed and fermented with native yeasts rather than undergoing the carbonic maceration commonly associated with Beaujolais. The wine is treated more like Pinot Noir from farther north in Burgundy, with a traditional maceration followed by approximately nine months of aging in stainless steel.
