Rías Baixas
This is a spectacular wine, with an almost white Burgundy–like combination of fruit, richness, and minerality. This is already becoming a cult wine in Spain, and only 120 bottles came to the US. The name “Dous Ferrados” is a reference to a ferrado, a traditional unit of measurement in Rías Baixas for the number of grapes it takes to fill one 500-liter barrel. As it goes, this vineyard is precisely dous (two) ferrados; hence there are only two 500-liter barrels of this wine produced. The vines are between 10 and 50 years old. The wine is fermented using indigenous yeast in 500-liter neutral oak barrel, then spends eight months on its lees in the barrel, with no stirring.
