Priorat
“Rocafosca” is a blend of 50% carignan and 50% grenache noir, from vines planted between 1939 and 1970 on soils of Devonian slate and sandy slate. The grapes are hand-harvested and vinified in stainless steel tanks and cement vats. Each variety is fermented separately. Spontaneous fermentation is carried out with indigenous vineyard yeasts, with a small percentage of whole cluster with stem inclusion. The wine is aged for 12 months in old Garbellotto Slavonian oak foudres and clay amphorae.
