Coessens Champagne "Les Sens Boisés" Extra-Brut (2017)
Jérôme Coessens is a young producer in the Aube that has been gaining attention over recent years. Rightfully so, his dedication to the terroir of his "Largilier Vineyard" is impressive. He has identified four different soil types within the vineyard, and makes several cuvée's highlighting those and sometimes blending them. These are textured and detailed Champagnes that offer a lot of pleasure.
This comes from the parcel called Substance. Fermentation is done in barrel, and aged for 8 months in those used Chablis barrels before the secondary fermentation. Malo is always carried out and this spends just over 2 years on its lees. This has nice rich Pinot fruit with soft spice and good freshness.
