Champagne
Champagne Ullens began in 2012, when the Belgian-born Maxime Ullens purchased Domaine de Marzilly, in the Massif de Saint-Thierry, Champagne’s northernmost region. He renovated the château and went to school to learn about producing Champagne. He now works with vines on four hectares of his land. All of the plots are vinified in oak barrels, and the barrels are made with trees from the local forest, by the Tonnellerie de Champagne of Cauroy-lès-Hermonville.
“Lot 04” is a blend of 80% Meunier and 20% Chardonnay, and 20% of the blend is vin de réserve, made of several vintages dating back to as early as 2016. Vinification is in oak barrels, and the wine is aged on its lees for 36 months. Riddling is done by hand.
