Champagne
Champagne Piollot is produced by the power couple Roland Piollot and his wife Dominique Moreau (winemaker of Marie-Courtin Champagne). The vines come from Roland's family, five generations worth of vinegrowing, and can be found in the southernmost portion of Champagne in the Aube, primarily in the town of Polisot out of the Côtes des Bar subregion. Underdog regions like the Aube are getting their deserved share of praise and we couldn't be more on board in supporting incredible winemakers like Roland and Dominique. Given Piollot's southern proximity, close to Chablis, the soils have great amounts of Kimmeridgean limestone. Taking into consideration climate differences in the Aube versus northern sites like Reims and Epernay, Piollot are firm believers in zero-dosage for all of their wines. Roland believes they would be too heavy, and we agree. The wines are capable of both incredible, natural weight and texture as well as finesse and elegance. The wines are highly expressive of their terroir, all bottled as single vineyard expressions.
"Come des Tallants" is 100% Pinot Noir, grown from a parcel of less than a hectare on a hill with direct southern exposure. Organic farming. Aged for four years on the lees. Production: 5,000 bottles/year. The wine is bright, with ripe fruit notes, minerality, and a playful texture.
