Buronfosse "Varron" Chardonnay Côtes du Jura '19

Buronfosse "Varron" Chardonnay Côtes du Jura '19

Peggy and Jean-Pascal Buronfosse moved to J. F. Ganevat’s village La Combe de Rotalier in 1999 after growing tired of life in the city. They wanted to live in a countryside setting where they could grow their own vegetables, raise chickens, rabbits, and pigs. Originally, their dream was to have a farm, but viticulture gradually drew their curiosity. They realized that they wanted to grow both their food and their drink. After acquiring several small vineyard parcels, they began working with trial and error, as well as gaining guidance from Monsieur Ganevat. Today they have certainly found their way. (Info from the importer Zev Rovine Selections)

Farming at Buronfosse is organic and biodynamic, and the domaine is ECOCERT-certified. For all the wines, harvesting is by hand, and fermentation is spontaneous, with indigenous yeast in neutral oak. There is no fining, no filtration, and no added SO2.

From a 0.37-hectare vineyard with limestone and clay soils, with an average vine age of 10 years. The wine is aged for 18 months in neutral oak, in the ouillé style.
