Beaujolais
“Les Cocottes” is the Dubois bottling meant for drinking while it's still young, delivering freshness, bright aromas, and lots of energy. The fruit is harvested from vines that range from 25 to 70 years in age, grown in estate vineyards in a southwest-facing amphitheater in the Les Labourons area of Fleurie. It is produced from whole-cluster fruit and fermented via carbonic maceration in tank, as is traditional in Beaujolais.
“Les Cocottes” is always a versatile wine and pairs well with several types of food: grilled salmon, ratatouille, or roasted chicken with a crispy baguette and salted butter are just a few options. Chill the wine in the fridge for fifteen to twenty minutes before serving to achieve optimal joy.
