Beaujolais
Anne-Sophie Dubois is a young, dedicated winemaker, originally from the Champagne region. After training in Burgundy, Anne went where she could find affordable vineyards with the potential to make great wine.
“Les Cocottes” is Dubois's bottling meant for drinking while it's still young, delivering freshness, bright aromas, and lots of energy. The fruit is harvested from vines that range from 25 to 70 years in age. It is produced from whole cluster fruit and fermented via carbonic maceration in tank, as is traditional in Beaujolais. Juicy, with soft tannins and spice, the wine has enough weight to pair well with several types of food. Think grilled salmon, ratatouille, or roasted chicken with a crispy baguette and good salted butter. Chill the wine in the fridge for fifteen or twenty minutes before serving to achieve optimal joy.
